Is it Valentine’s Day already? I have a feeling Luke would pose the same question?
Do you have a hard time buying for your significant other? Holidays like Valentine’s Day prove to be quite difficult for me since Luke doesn’t care for flowers, bath salts, or caramels. So typically I cook or bake because we all know the way to a man’s heart is through his stomach. Last year I baked lavender and sea salt shortbread cookies accompanied with days prepping and piping French Macarons. This year, something a little more American. Rice Krispy Treats with Melted Cherry Chips!
This a treat my mother has been whipping up in the kitchen for as long as I can remember. They’re quick, easy and addicting. That makes it a family favorite.
If you haven’t used cherry chips before you can find them at your grocer aside the chocolate chips. However, they tend to be stocked seasonally so depending on the year they can be hard to find. In other words, buy multiple bags and store them in the freezer because after you whip up these Rice Krispy Treats you won’t want them any other way.

Rice Krispy Treats with Melted Cherry Chips / makes a 13 x 9 x 2 pan
10 c rice krispies
1 stick of butter
1 bag of small marshmallows
1 bag of cherry chips
1 Tbs shortening
In a large saucepan, melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat and add rice krispies and stir until coated.
Grease a 13 x 9 x 2 baking dish and using spatula spread rice krispies into dish. Let cool.
In a double broiler, melt one bag of cherry chips with one Tbs of shortening. Stir until completely melted. Do not overheat. Spread over cooled rice krispy treats. Let cool and then cut.
I like my rice krispy treats thick so I used a square baking dish instead. If you do the same, you won’t use a whole bag of cherry chips. Feel free to use your favorite Rice Krispy treat recipe or go to the experts
Also, a little lesson I learned. If you think rice krispies are good way to use up your old hard marshmallows. Think again. Your rice krispies will turn out rock hard just like your mallows.
